L\u2019objectif e\u0301tant de faire appre\u0301cier aux invite\u0301s la phase pratique de leur formation qui allie savoir-faire europe\u0301en aux produits locaux.<\/b><\/p>\n<p>Cette se\u0301ance de de\u0301gustation s\u2019est de\u0301roule\u0301e en pre\u0301sence de la ministre de l\u2019Industrie culturelle, touristique, artistique et des Loisirs, Lydie Pongault, de quelques membres dudit ministe\u0300re ainsi que des personnalite\u0301s politiques congolaises, des repre\u0301sentants d\u2019organisations internationales et des diplomates. Le menu se composait notamment de la banane plantain et sa cre\u0300me le\u0301ge\u0300re en guise de mise en bouche suivie d\u2019autres fruits et le\u0301gumes en pre\u0301entre\u0301e et de petit sale\u0301 comme entre\u0301e. Comme plats principaux, les convives ont savoure\u0301 du pave\u0301 de bar de Brazza et de la volaille fermie\u0300re croustillante. Au dessert a e\u0301te\u0301 propose\u0301 du crumble aux fruits. Ce menu aux allures exotiques et modernes a e\u0301te\u0301 essentiellement concocte\u0301 avec des ingre\u0301dients du terroir comme la pa\u0302te d\u2019arachide, les noix de palme, la patate douce, le bissap, la citronnelle, la noisette de Mvouti, la barbadine, le malombo, etc.<\/p>\n<p>Ce mixte de techniques europe\u0301ennes aux saveurs locales ont conquis les officiels qui ont tari d\u2019e\u0301loges le coaching des chefs Alf Bantsimba et Jeffrey Zobel, venus de France, a\u0300 la douzaine de cuisiniers congolais en formation. \u00ab C&rsquo;e\u0301tait excellent, vraiment une tre\u0300s belle expe\u0301rience. Ce que j&rsquo;ai particulie\u0300rement appre\u0301cie\u0301, c&rsquo;e\u0301tait de partir vraiment de quelque chose de traditionnel, de le revisiter et de le moderniser, surtout que c\u0327a soit fait par des jeunes dans un e\u0301lan de transfert de compe\u0301tences. Bravo a\u0300 madame la ministre pour l\u2019initiative ! \u00bb, a de\u0301clare\u0301 Fatoumata Barry Marega, repre\u0301sentante de l&rsquo;Unesco. A l\u2019ambassadeur de l&rsquo;Union europe\u0301enne (UE) au Congo, Giacomo Durazzo, de renche\u0301rir: \u00ab En partant des produits du Congo, c\u0327a e\u0301te\u0301 une belle de\u0301couverte cette e\u0301laboration vers une cuisine un peu plus moderne et revisite\u0301e. Dans un bon espoir que cette formation soit un succe\u0300s et qu&rsquo;on ait de plus en plus de nouveaux chefs qui puissent donc pre\u0301parer des plats de la cuisine congolaise revisite\u0301e \u00bb.<\/p>\n<p>Pour les deux coachs, cette se\u0301ance de de\u0301gustation initie\u0301e par le ministe\u0300re de l\u2019Industrie culturelle montre a\u0300 suffisance que le but fixe\u0301, a\u0300 savoir celui de valoriser le patrimoine culinaire congolais et de renforcer l&rsquo;expertise dans le secteur de l&rsquo;ho\u0302tellerie, semble atteint. \u00ab L&rsquo;objectif e\u0301tait d\u2019apprendre aux participants a\u0300 rede\u0301couvrir leurs produits, de savoir comment le produit fonctionne, comment il re\u0301agit, comment retirer certaines saveurs qui peuvent nous parai\u0302tre parfois assez ame\u0300res ou aigres et de savoir comment on peut les transformer pour les sublimer. Je suis tre\u0300s fier de mes apprenants parce qu&rsquo;ils ont donne\u0301 beaucoup d&rsquo;e\u0301nergie et beaucoup d&rsquo;efforts. Ce n&rsquo;e\u0301tait pas e\u0301vident parce qu&rsquo;on a eu tre\u0300s peu de temps pour se pre\u0301parer et, honne\u0302tement, ils ont fait un gros boulot et je suis su\u0302r que, au terme de la formation, ils repartiront avec beaucoup de connaissances et beaucoup d&rsquo;envie \u00bb, a indique\u0301 le chef Alf.<\/p>\n<p>Pour l\u2019un des participants, Brige, cette formation a le me\u0301rite de les emmener a\u0300 se surpasser, a\u0300 faire preuve de curiosite\u0301 et de cre\u0301ativite\u0301. \u00ab Gra\u0302ce a\u0300 cette formation, on a par exemple appris que l\u2019on peut manger du safou, mais sans avoir la forme du safou dans l\u2019assiette. C\u2019est vraiment spectaculaire. Je n\u2019ose imaginer tout ce qu\u2019on peut faire avec la diversite\u0301 de produits que nous avons ici au Congo \u00bb, a-t-il dit. Rosia Mangue a, pour sa part, remercie\u0301 le ministe\u0300re de tutelle pour l\u2019initiative tout en souhaitant de la pe\u0301renniser afin que plusieurs autres cuisiniers locaux s\u2019arriment a\u0300 ces techniques de transformation des produits du terroir. Son v\u0153u est de voir plus de plats gastronomiques congolais dans les menus des restaurants de la place et me\u0302me ailleurs.<\/p>\n\r\n                <style type=\"text\/css\">\r\n
