Marinating meat helps to tenderize it and greatly enhances its flavour. These marinades will ensure that the meat you cook is always succulent, flavourful and fall-off-the-bone tender.<\/p>\n

Pineapple marinade \u2013 Fresh pineapple has an enzyme called bromelain that breaks down the protein in meat and dissolves the collagen making it tender. This simple pineapple marinade will soften tough meat and add a subtle, tangy flavour.<\/p>\n

Ingredients<\/b><\/p>\n

500g beef, cut into 2.5cm cubes<\/p>\n

120ml (1\u20442 cup) fresh pineapple juice<\/p>\n

30ml (2 tbsp) soy sauce<\/p>\n

1 tbsp finely grated ginger<\/p>\n

3 large cloves garlic, minced<\/p>\n

1\u20442 tsp each salt and freshly ground black pepper<\/p>\n

Put the beef cubes in a zip top or plastic bag. Blend the marinade ingredients together in a blender, pour over the beef and mix well. Marinate in the fridge for 24-48 hours before cooking.<\/p>\n

Lemon and rosemary marinade \u2013 In this marinade, the acid in the lemon juice helps breaks down the protein and connective tissue in tough meat, making it soft and juicy.<\/p>\n

Ingredients<\/p>\n

l 500g beef, cut into 2.5cm cubes<\/p>\n

l 80ml (1\/3 cup) lemon juice<\/p>\n

l 1 tbsp minced garlic<\/p>\n

l 120ml (1\u20442 cup) olive oil<\/p>\n

l 60ml (1\u20444 cup) Worcestershire sauce<\/p>\n

l 2 tbsp finely chopped rosemary<\/p>\n

l 1\u20442 tsp each salt and freshly ground black pepper<\/p>\n

Put the beef cubes in a zip top or plastic bag. Shake the marinade ingredients vigourously in a jar with a tight-fitting lid. Pour over the beef and mix well. Marinate overnight in the fridge before cooking.<\/p>\n

Spicy yoghurt marinade \u2013 The lactic acid in yoghurt helps tenderize meat gently and effectively.<\/p>\n

Ingredients<\/b><\/p>\n

500g beef, cut into 2.5cm cubes<\/p>\n

240ml (1 cup) plain yoghurt<\/p>\n

2 medium red onions, finely chopped<\/p>\n

3\u20444 tsp each of ground coriander, cumin, garam masala and cinnamon<\/p>\n

1\u20442 tsp ground ginger<\/p>\n

1\u20442 tsp ground cardamom<\/p>\n

2 large cloves garlic, minced<\/p>\n

1\u20442 tsp each salt and freshly ground black pepper<\/p>\n

Blend the ingredients in a blender. Put the beef in a zip top or plastic bag and pour over the marinade. Marinate overnight in the fridge before cooking.<\/p>\n
