D\u2019e\u0301te\u0301 (guyot, williams), d\u2019automne (Beurre\u0301 Hardy, Louise Bonne d\u2019Avranches, etc.) et d\u2019hiver (passe-crassane, comice&#8230;), ce fruit juteux et doux se marie aussi bien aux plats sucre\u0301s que sale\u0301s et se conserve d\u2019autant mieux qu\u2019il continue de mu\u0302rir une fois cueilli, garde\u0301 a\u0300 tempe\u0301rature ambiante. Pourtant, ce pe\u0301che\u0301 mignon de Louis XVI occupe, avec 4,7 kg achete\u0301s par an et par me\u0301nage, une modeste sixie\u0300me place dans nos corbeilles de fruits, loin derrie\u0300re la banane (13,1 kg\/me\u0301nage) et la pomme (8,8 kg). Il est donc temps de rede\u0301couvrir ses nombreux be\u0301ne\u0301fices nutritionnels dont on aurait tort de se priver.<\/p>\n<p><b>La poire est le\u0301ge\u0300rement sucre\u0301e&#8230;<\/b><\/p>\n<p>Avec 54 kcal pour 100 g, la poire est rafrai\u0302chissante et peu e\u0301nerge\u0301tique car elle est compose\u0301e a\u0300 84 % d\u2019eau. Son taux de sucres varie de 8 a\u0300 11 g\/100 g selon la varie\u0301te\u0301 et la maturite\u0301 du fruit. Il s\u2019agit en majorite\u0301 de fructose (7,2 g\/100 g pour la williams), suivi du saccharose et du glucose. La poire contient aussi un polyol, le sorbitol (1,89 g\/100 g) au fort pouvoir sucrant, tandis que les acides malique et citrique (0,3 g\/100 g) lui confe\u0300rent sa saveur le\u0301ge\u0300rement acidule\u0301e. A\u0300 noter que l\u2019odeur typique de la poire williams est due a\u0300 deux esters (e\u0301thyl (E, Z) -2,4-de\u0301cadie\u0301noate et e\u0301thyl (E, E) -2,4-de\u0301cadie\u0301noate), tandis que l\u2019ace\u0301tate d\u2019hexyle lui donne son aro\u0302me.<\/p>\n<p><b>et peut e\u0302tre conseille\u0301e en cas de diabe\u0300te&#8230;<\/b><\/p>\n<p>Le pouvoir sucrant du fructose est plus e\u0301leve\u0301 que celui du sucre de table, mais son indice glyce\u0301mique (IG) est bas (20 contre 100 pour le glucose). Avec un IG global de 38, la poire n\u2019e\u0301le\u0300ve pas brutalement le taux de sucre dans le sang ni la se\u0301cre\u0301tion d\u2019insuline par le pancre\u0301as. Elle peut donc e\u0302tre consomme\u0301e par les diabe\u0301tiques, d\u2019autant que sa pulpe \u2013 et plus encore sa peau \u2013 contient des compose\u0301s phe\u0301noliques, notamment des flavonoi\u0308des (cate\u0301chine, e\u0301picate\u0301chine, anthocyanes, querce\u0301tine, etc.) et des acides phe\u0301noliques. La consommation d\u2019aliments riches en anthocyanes, tels que les poires, serait ainsi associe\u0301e a\u0300 un risque plus faible de diabe\u0300te de type 2. La querce\u0301tine, un flavonol (sous-groupe des flavonoi\u0308des), est aussi connue pour ses proprie\u0301te\u0301s antidiabe\u0301tiques, antivirales et anti-inflammatoires.<\/p>\n<p><b>C\u2019est une bonne source de fibres<\/b><\/p>\n<p>Une poire (150 g environ) fournit 4,65 g de fibres, soit pre\u0300s de 20 % des apports journaliers recommande\u0301s (25 g). Il s\u2019agit pour 71 % de fibres insolubles (cellulose, he\u0301micellulose), qui pre\u0301viennent la constipation en stimulant la motricite\u0301 du co\u0302lon et en augmentant la fre\u0301quence des selles. Mais ces fibres peuvent aussi e\u0302tre source de douleurs intestinales et de ballonnements. En cas d\u2019intestins fragiles, il vaut mieux privile\u0301gier des varie\u0301te\u0301s a\u0300 chair fondante (confe\u0301rence, comice, guyot&#8230;) qui contiennent plus de pectine, une fibre soluble et douce.<\/p>\n<p><b>Plus d\u2019antioxydants avec la pelure<\/b><\/p>\n<p>La poire apporte plus de fibres et d\u2019antioxydants lorsqu\u2019on la consomme entie\u0300re. La teneur totale en compose\u0301s phe\u0301noliques peut ainsi varier de 10 mg\/100 g de poids frais dans la chair (confe\u0301rence) a\u0300 160 mg\/100 g de poids frais dans la peau (williams verte). Elle apporte aussi des mine\u0301raux et contribue a\u0300 la couverture de nos besoins journaliers en potassium (150 mg\/100 g), implique\u0301 dans la re\u0301gulation de la tension arte\u0301rielle. En quantite\u0301s assez modestes sont aussi pre\u0301sents du phosphore (13 mg\/100 g), du calcium (11 mg\/100 g), du magne\u0301sium (7 mg\/100 g) ou encore de la vitamine C (6 mg\/100 g).<\/p>\n<p><b>Gare aux allergies croise\u0301es<\/b><\/p>\n<p>Les personnes allergiques aux pollens des be\u0301tulace\u0301es (bouleau, aulne, noisetier) peuvent de\u0301velopper une allergie croise\u0301e a\u0300 des aliments de la famille des rosace\u0301es comme la poire, mais aussi les pommes, pe\u0302ches et prunes. Consommer une poire crue (la cuisson de\u0301grade les prote\u0301ines allerge\u0300nes) peut alors ge\u0301ne\u0301rer un syndrome d\u2019allergie orale se caracte\u0301risant par des de\u0301mangeaisons et des sensations transitoires de bru\u0302lure a\u0300 la bouche, aux le\u0300vres et a\u0300 la gorge.<\/p>\n<p><b>\u201cLa pre\u0301fe\u0301rer frai\u0302che pluto\u0302t qu\u2019en sirop ou se\u0301che\u0301e\u201d, par Alexandra Murcier, die\u0301te\u0301ticienne nutritionniste a\u0300 Paris<\/b><\/p>\n<p>\u201cLes poires au sirop restent un dessert tre\u0300s sucre\u0301, le liquide de conservation e\u0301tant compose\u0301 de saccharose mais aussi parfois de sirop de glucose-fructose, obtenu par hydrolysation de l\u2019amidon de mai\u0308s et ne\u0301faste pour la sante\u0301. La poire se\u0301che\u0301e concentre\u0301e en sucres (70 %) peut e\u0302tre consomme\u0301e avant une activite\u0301 sportive, mais elle ne remplace pas une portion de fruit frais. Prudence toutefois avec les intestins fragiles car le sorbitol, un sucre fermentescible, peut occasionner des troubles gastro-intestinaux.
