Africa-Press – Mauritius. <\/strong><\/span>Katherine Lim made her presence felt in the country as she hopped from city to city for luxury food pop-ups. She recently showcased her dishes in Mauritius to give the folks a taste of delicacies like Crackling pork, Steamed fish with ginger and scallion, Hong Kong typhoon shelter prawn to name a few.<\/p>\n

Chef Katherine was hosted by Mauritian Hakka business titan Maxime NC King and served her creations to dignitaries, diplomats and the local Hakka population on the island nation.<\/p>\n

Yam abacus beads was part of the menu \u2013 a dish which is rarely served outside Hakka homes, along with her homemade Huang Jiu rice wine. A Kolkata touch was provided by the Bikrampur Kasundi that accompanied her Crackling pork instead of the usual hot mustard.<\/p>\n

Talking about her time on the east African island, Chef Katherine said, \u201cIt was a fabulous experience, taking my cooking from Kolkata to the beautiful island of Mauritius.<\/p>\n

The plus point was meeting fellow Hakkas and discussing our roots and discovering that while the ingredients might differ sometimes, our food is so similar.
\nThe lunches and dinners were held in al fresco settings surrounded by a crescent shaped beach, a sparkling turquoise ocean with floating yachts, verdant gardens, glittering Diwali lights and often accompanied by fireworks in the sky.<\/p>\n

Kolkata-Hong Kong-based culinary curators Gormei help Chef Katherine bring the cuisine of the migrant Hakkas to various parts of the world where the Hakka communities are scattered including Indian Ocean islands like Mauritius where the Hakkas first settled in 1745.<\/p>\n

Many of the dinner guests in Mauritius traced their family lines to Meizhu (Moiyan) in China where Katherine\u2019s grandfather first set sail to India from.<\/p>\n
