Si la re\u0301glementation franc\u0327aise n\u2019autorise l\u2019appellation \u201cpoivre\u201d que pour les fruits issus des poivriers de la famille des pipe\u0301race\u0301es (Piper nigrum, Piper longum, Piper cubeba, etc.), ce roi des e\u0301pices, originaire d\u2019Inde, se distingue d\u2019autres baies telles celles de Sichuan (Zanthoxylum piperitum), provenant de Chine ou de Timur du Ne\u0301pal (Zanthoxylum armatum), ou encore les baies roses (Schinus terebinthifolius).<\/p>\n<p>Le piment (famille des solanace\u0301es), frais, sec ou en sauce, s\u2019impose lui aussi sur les e\u0301tage\u0300res de nos cuisines, qu\u2019il soit doux et subtil comme le paprika, ou fort et explosif comme le piment oiseau. D\u2019autant qu\u2019en plus de ses capacite\u0301s a\u0300 exalter les saveurs d\u2019un plat, il posse\u0300de, comme le poivre, de nombreux bienfaits nutritionnels et pour la sante\u0301.<\/p>\n<p><b>Une e\u0301chelle du piquant<\/b><\/p>\n<p>L\u2019e\u0301chelle de Scoville, mise au point en 1912 par le pharmacologue ame\u0301ricain Wilbur Scoville, mesure la force des piments. Celui d\u2019Espelette affiche 1000 a\u0300 3000 unite\u0301s Scoville ; le piment oiseau et la harissa (pure\u0301e de piments rouges) 30.000 a\u0300 60.000 unite\u0301s ; le piment habanero, 150.000 a\u0300 325.000 unite\u0301s ; le Dragon\u2019s Breath, 2,48 millions d\u2019unite\u0301s.<\/p>\n<p>Depuis 2017, le piment le plus fort au monde (re\u0301pertorie\u0301 dans le Guinness des records ) est le Pepper X, avec 3,2 millions d\u2019unite\u0301s sur l\u2019e\u0301chelle de Scoville. A\u0300 noter que la capsai\u0308cine \u2013 responsable du piquant \u2013 e\u0301tant lipophile, il est conseille\u0301, pour couper le \u201cfeu\u201d d\u2019un piment, de le consommer me\u0301lange\u0301 a\u0300 une matie\u0300re grasse (lait, huile, cre\u0300me frai\u0302che, etc.).<\/p>\n<p><b>C\u2019est une bonne source d\u2019antioxydants<\/b><\/p>\n<p>Poivres et piments apportent en petites quantite\u0301s de nombreux mine\u0301raux et oligo-e\u0301le\u0301ments : fer, magne\u0301sium, phosphore, calcium (2,6 mg pour 1 g de poivre blanc) ou potassium (16 mg\/1 g de poivre noir). 10 g de piment de Cayenne fournissent aussi 7,6 mg de vitamine C, 3 mg de vitamine E, 8 \u03bcg de vitamine K et 10 \u03bcg de vitamine B9. Tous posse\u0300dent e\u0301galement une grande varie\u0301te\u0301 d\u2019antioxydants.<\/p>\n<p>Pour les piments, la capsai\u0308cine, la querce\u0301tine et la lute\u0301oline, et pour les poivres, la pipe\u0301rine (qui donne le gou\u0302t piquant), le be\u0302ta-carote\u0300ne, les acides laurique et myristique. A\u0300 noter que les huiles essentielles (sabine\u0300ne, alpha- et be\u0302ta-pine\u0300ne, limone\u0300ne, etc.) qui confe\u0300rent au poivre son aro\u0302me et son gou\u0302t spe\u0301cifiques repre\u0301sentent jusqu\u2019a\u0300 3,5 % du fruit.<\/p>\n<p><b>Le piment serait be\u0301ne\u0301fique pour le c\u0153ur&#8230;<\/b><\/p>\n<p>Consommer des piments rouges forts serait associe\u0301 a\u0300 une re\u0301duction de 13 % du risque de mortalite\u0301 pre\u0301mature\u0301e, principalement lie\u0301e aux maladies cardiaques ou a\u0300 l\u2019accident vasculaire ce\u0301re\u0301bral, d\u2019apre\u0300s des travaux ame\u0301ricains. Selon une e\u0301tude plus re\u0301cente, manger au moins quatre fois par semaine du piment re\u0301duirait de 34 % le risque de mortalite\u0301 par maladie cardio-vasculaire.<\/p>\n<p>Le piment favoriserait aussi la circulation sanguine. Une e\u0301tude mene\u0301e sur plus de 13.000 adultes chinois pendant neuf ans a mis en e\u0301vidence que leur consommation est inversement associe\u0301e a\u0300 l\u2019hypertension arte\u0301rielle. La prise de piment semble e\u0301galement aider a\u0300 garder un poids stable.<\/p>\n<p><b>et pour le microbiote intestinal &#8230;<\/b><\/p>\n<p>Seuls 25 % de la capsai\u0308cine dige\u0301re\u0301e sont absorbe\u0301s par l\u2019intestin. Cet alcaloi\u0308de peut donc atteindre des concentrations e\u0301leve\u0301es dans les selles, expliquant les possibles crises he\u0301morroi\u0308daires qui suivent une forte consommation de piment. La capsai\u0308cine posse\u0300de toutefois une action antibacte\u0301rienne, en empe\u0302chant la croissance des bacte\u0301ries nocives. Elle stimulerait e\u0301galement la production dans le co\u0302lon de mucine, laquelle favorise la croissance de \u201cbonnes\u201d bacte\u0301ries.<\/p>\n<p>En outre, si la consommation de piment est de\u0301conseille\u0301e aux personnes souffrant de troubles gastriques pre\u0301existants comme les ulce\u0300res, la capsai\u0308cine inhiberait la se\u0301cre\u0301tion d\u2019acide gastrique et aiderait a\u0300 lutter contre les douleurs et pesanteurs gastriques, la dyspepsie.<\/p>\n<p><b>Poivre et piments soulagent la douleur<\/b><\/p>\n<p>Leurs proprie\u0301te\u0301s analge\u0301siques sont lie\u0301es a\u0300 la capsai\u0308cine pour le piment et a\u0300 la pipe\u0301rine, un alcaloi\u0308de pre\u0301sent (2 a\u0300 9 %) dans l\u2019enveloppe du grain de poivre.
