Ces structures, compose\u0301es de ba\u0302timents administratifs, d&rsquo;entrepo\u0302ts et de logements pour les travailleurs, refle\u0300tent encore aujourd&rsquo;hui l&rsquo;organisation hie\u0301rarchique et les syste\u0300mes e\u0301conomiques de l&rsquo;e\u0301poque.<\/p>\n<p>La culture de la canne a\u0300 sucre, introduite au 15e sie\u0300cle, a domine\u0301 les activite\u0301s agricoles pendant plusieurs de\u0301cennies, avant d\u2019e\u0302tre remplace\u0301e progressivement par le cacao et le cafe\u0301, devenus les principales exportations. Cependant, les paysages agricoles, marque\u0301s par les champs de canne et les infrastructures lie\u0301es a\u0300 la production du sucre, restent des te\u0301moins importants de cette pe\u0301riode.<\/p>\n<p>Les \u00ab\u00a0roc\u0327as\u00a0\u00bb abandonne\u0301es, qui parse\u0300ment les i\u0302les, offrent un aperc\u0327u de cette histoire, tout en posant des questions sur la manie\u0300re de pre\u0301server ces sites en tant que patrimoine culturel et historique. Aujourd\u2019hui, ces paysages suscitent un inte\u0301re\u0302t croissant pour le de\u0301veloppement du tourisme culturel et pour une re\u0301flexion sur le passe\u0301 colonial de Sa\u0303o
