Puis celle du cacao fondu, que les salari\u00e9s pr\u00e9parent devant le ma\u00eetre des lieux : Claudio Corallo, 65 ans, qui passe pour l\u2019un des meilleurs chocolatiers au monde. \u00ab C\u2019est un peu humiliant, parce que ma vraie passion, c\u2019est le caf\u00e9\u2026 Or on ne parle que de mon chocolat ! \u00bb plaisante cet Italien qui r\u00e9side depuis pr\u00e8s vingt ans sur l\u2019archipel, dont il a acquis la nationalit\u00e9.<\/p>\n<p><b>De la passion pour le caf\u00e9 \u00e0 la transformation du cacao<\/b><\/p>\n<p>Cheveux grisonnants et regard per\u00e7ant, le Florentin raconte comment il a quitt\u00e9 son Italie natale apr\u00e8s avoir obtenu son dipl\u00f4me. \u00ab Je me suis sp\u00e9cialis\u00e9 en agronomie tropicale. C\u2019\u00e9tait un acte pr\u00e9m\u00e9dit\u00e9\u2026 Je voulais partir \u00bb, se souvient-il. En 1974, il s\u2019envole pour le Za\u00efre (actuelle RD Congo). S\u00e9duit par les caf\u00e9iers, il cr\u00e9e deux plantations pr\u00e8s de la rivi\u00e8re Lomela (ex-province de l\u2019\u00c9quateur), o\u00f9 il s\u2019\u00e9tablit avec femme et enfants.<\/p>\n<p>Au d\u00e9but des ann\u00e9es 1990, la situation s\u00e9curitaire se d\u00e9grade. La guerre arrive aux portes de son exploitation. Sur la route de la lointaine Bolivie, o\u00f9 il se rend r\u00e9guli\u00e8rement pour apporter son expertise, il trouve S\u00e3o Tom\u00e9-et-Pr\u00edncipe. Sa famille s\u2019y installe, mais lui refuse d\u2019abandonner ses terres. Jusqu\u2019\u00e0 ce que le conflit lui impose de fuir la RD Congo, en 1998. Il rejoint alors les siens, avec un baluchon pour tout bagage.<\/p>\n<p>Sur les hauteurs de S\u00e3o Tom\u00e9, il cr\u00e9e une plantation de caf\u00e9iers, Nova Moca, et, sur un terrain nich\u00e9 contre le flanc est de Pr\u00edncipe, d\u00e9cide de cultiver des cacaoyers. \u00ab Par simple int\u00e9r\u00eat botanique au d\u00e9part \u00bb, puisque, comme il le r\u00e9p\u00e8te encore aujourd\u2019hui, il n\u2019a jamais aim\u00e9 l\u2019amertume du chocolat noir.<\/p>\n<p>\u00ab Un d\u00e9faut que je ne retrouvais pas dans la f\u00e8ve. J\u2019ai d\u00e9couvert qu\u2019il venait de la transformation. Finalement, \u00e7a a donn\u00e9 mon chocolat. Ce n\u2019est pas forc\u00e9ment meilleur, c\u2019est juste une autre fa\u00e7on d\u2019interpr\u00e9ter le cacao \u00bb, explique Claudio Corallo.<\/p>\n<p><b>Un produit de luxe qui s\u2019exporte<\/b><\/p>\n<p>Son chocolat, issu des meilleures f\u00e8ves de sa plantation de Terreiro Velho, fait red\u00e9couvrir le vrai go\u00fbt du cacao, sans sucre ajout\u00e9. \u00ab Son chocolat est merveilleux \u00bb, tranche le c\u00e9l\u00e8bre cuisinier santom\u00e9en Jo\u00e3o Carlos Silva . Ce que confirment plusieurs chefs internationaux, qui s\u2019arrachent ses tablettes, vendues 16,50 euros l\u2019unit\u00e9 et destin\u00e9es en grande majorit\u00e9 \u00e0 l\u2019export.<\/p>\n<p>Serait-ce un chocolat de luxe ? Claudio Corallo pr\u00e9f\u00e8re mettre en avant la qualit\u00e9 de son produit et le suivi des clients sur sa plateforme en ligne. \u00ab Pas comme certains producteurs qui arnaquent les consommateurs avec l\u2019image d\u2019un paysan qui n\u2019existe pas \u00bb, souligne l\u2019agronome, dont la production reste volontairement confidentielle face aux mastodontes du secteur.<\/p>\n<p>Chaque mois, il transforme environ 1,5 t de cacao dans sa \u00ab fabrique de chocolat \u00bb. Une exception dans l\u2019archipel, o\u00f9 la quasi-totalit\u00e9 des f\u00e8ves est export\u00e9e \u00e0 l\u2019\u00e9tat brut. R\u00e9sultat, Corallo emploie aujourd\u2019hui quelque 300 personnes. \u00ab Seulement des Santom\u00e9ens \u00bb, tient-il \u00e0 pr\u00e9ciser.<\/p>\n<p>Si le chocolat constitue la majeure partie de son activit\u00e9, il cultive aussi le poivre, s\u2019essaie \u00e0 la vanille et distille de la pulpe de cacao, y faisant mac\u00e9rer quelques f\u00e8ves. Surtout, il n\u2019oublie pas ses premi\u00e8res amours. Sur les contreforts de la plus haute montagne de S\u00e3o Tom\u00e9, ce passionn\u00e9 produit trois vari\u00e9t\u00e9s rares d\u2019arabica.<\/p>\n<p>Et, sur les collines de sa plantation Terreiro Velho, \u00e0 Pr\u00edncipe, cultive du lib\u00e9rica, une vari\u00e9t\u00e9 de caf\u00e9 ancienne et presque disparue, qu\u2019il marie \u00e0 l\u2019un de ses chocolats d\u2019exception.
