Africa-Press<\/a> – South-Africa<\/a>. <\/strong><\/span>Although 2020 is coming to a close, it’s more important than ever to continue being observant about Covid-19 safety practices like social distancing, wearing face masks, and limiting a person to person contact as much as possible.<\/p>\n

Individuals should limit their gatherings to include direct households only in order to lower the risk of Covid-19 spread. That means your New Year’s Eve plans should include staying at home.<\/p>\n

But that doesn’t mean your New Year’s Eve plans have to be boring.<\/p>\n

There are so many fun and creative ways to mark the end of 2020 at home, and one of those is creating a delicious feast.<\/p>\n

Below are recipes that you can remake at home.<\/p>\n

Stuffed cabbage rolls<\/b><\/p>\n

Serves: 6-8<\/p>\n

Ingredients<\/b><\/p>\n

1 large cabbage<\/p>\n

500g cubed butternut<\/p>\n

1 large red onion, cut into chunks<\/p>\n

1 green apple, cored and cut into chunks<\/p>\n

10ml chopped garlic<\/p>\n

15ml olive oil<\/p>\n

Salt and pepper<\/p>\n

250ml apple juice<\/p>\n

30ml honey<\/p>\n

15ml balsamic vinegar<\/p>\n

375ml cooked quinoa<\/p>\n

80ml dried cranberries<\/p>\n

Tomato sauce<\/p>\n

6-8 ripe tomatoes, roughly chopped<\/p>\n

10ml chopped garlic<\/p>\n

30ml tomato paste<\/p>\n

10ml brown sugar<\/p>\n

Method<\/b><\/p>\n

Trim the cabbage, cutting around the core to remove the leaves easily.<\/p>\n

Place in a large pot. Cover with water and bring to a boil.<\/p>\n

Simmer until soft (about 10 minutes). Remove and drain.<\/p>\n

Combine the butternut, onion, apple, garlic, olive oil, and seasoning in a deep roasting tray. Pour the apple juice, honey, and balsamic vinegar over.<\/p>\n

Roast at 180\u00b0C for 30-40 minutes until the vegetables are soft. Remove and cool slightly.<\/p>\n

Combine with quinoa and cranberries. Adjust the seasoning to taste. Separate the cabbage leaves. Remove the tough vein from the leaves.<\/p>\n

Place a generous spoonful of filling at the base of the cabbage leaf and fold over the sides, then roll up to enclose the filling.<\/p>\n

Repeat until all the filling is used.<\/p>\n

Sauce: Put the tomatoes into a blender and puree. Transfer them to a pot and add the remaining ingredients. Bring to a simmer and cook for 10 minutes. Spoon half the sauce into an ovenproof dish. Lay the stuffed cabbage leaves on the<\/p>\n

sauce. Pour over the remaining sauce. Cover the dish with foil and bake at 180\u00b0C for 30 minutes. Serve warm<\/p>\n

Grape salad with candied pecans<\/b><\/p>\n

Serves 4-6<\/p>\n

Ingredients<\/b><\/p>\n

Pecans<\/p>\n

125ml chopped pecan nuts<\/p>\n

10ml water<\/p>\n

30ml brown sugar<\/p>\n

10ml honey<\/p>\n

For the salad<\/p>\n

125ml sour cream<\/p>\n

125g cream cheese<\/p>\n

30-40ml honey<\/p>\n

5ml vanilla essence<\/p>\n

500ml seedless red grapes<\/p>\n

500ml seedless white grapes<\/p>\n

45ml pomegranate rubies<\/p>\n

Method<\/b><\/p>\n

Pecans: Combine all the ingredients and mix well. Line a baking tray with foil. Add the coated nuts.<\/p>\n

Bake at 180\u00b0C for 10-15 minutes until nuts are toasted.<\/p>\n

Remove and cool.<\/p>\n

Salad: Combine the sour cream, cream cheese, honey, and vanilla essence and mix until smooth.<\/p>\n

Add the grapes and mix until they are well coated with the dressing.<\/p>\n

Spoon into a serving dish.<\/p>\n

Scatter the pomegranates and the candied nuts over before serving.<\/p>\n

Ice cream cake<\/b><\/p>\n

Ingredients<\/b><\/p>\n

For cake<\/b><\/p>\n

150g Bourbon Biscuits<\/p>\n

40 five star chocolate<\/p>\n

1 and a half litre vanilla ice cream<\/p>\n

200g choco chips<\/p>\n

For butterscotch sauce<\/b><\/p>\n

2 tbsp butter<\/p>\n

3 tbsp powdered sugar<\/p>\n

2 tbsp honey<\/p>\n

2 drops of vinegar<\/p>\n

125ml cream<\/p>\n

Method<\/b><\/p>\n

Take Bourbon biscuits and 5-star chocolate in a polythene cover and crush biscuits and chocolate so that they form small chunks.<\/p>\n

Take vanilla ice cream in a bowl and mix Bourbon biscuits<\/p>\n

and 5-star chocolate chunks in it.<\/p>\n

Mix choco chips in the bowl.<\/p>\n

Put the ice cream in a tin and refrigerate it for 2-3 hours.<\/p>\n

Heat a pan and add butter.<\/p>\n

Add sugar and honey to the pan, mix, and let it bubble.<\/p>\n

Add vinegar and cream. Mix thoroughly.<\/p>\n

Allow the sauce to cool down and then refrigerate it.<\/p>\n

Serve the ice-cream by pouring the Butterscotch sauce over it.<\/p>\n
