Preheat the oven to 190°C.
Fry the bacon in a little olive oil in a medium-sized ovenproof pan for 3–4 minutes, or until the bacon is lightly golden. Stir in the spinach until it wilts.
Mix together the eggs and milk and pour into the pan. Add the cheese and seasoning.
Bake for 20 minutes, or until golden. Remove from the oven, allow to cool slightly, then serve.
Variations
Use slivers of smoked salmon instead of bacon which will also reduce the cooking time, as you will only need to wilt the spinach and then everything can be mixed together and put in the oven.
Divide the mixture between the holes of a muffin tray to make a delicious snack or lunchbox filler.
